The pronunciation of this Catalan salad is similar to the French 'chateau'. The name is thought to derive from the Catalan verb 'aixatonar', which means to tap a wine barrel. This action would take place at the festival of the new (young) wine accompanied by ingredients and elements from the larders of the fisherman and greens from the winter harvest.
Much like the famous Calçotadas (festival of the Catalan long onion: calçots), there exists the Xatonada, a festival celebrating this regional dish.
The "Xató Route" is formed by the following Catalan towns: Canyelles, Calafell, Cubelles, Cunit, El Vendrell, Sant Pere de Ribes, Sitges and Vilanova i la Geltrú. There is a recipe for each town all along the 'Xató route'.
